Summer = Grain Salads!

Lately it's been hot and sunny here in Minnesota, and for me, that means the less time working over a hot stove, the better.  Grain based salads to the rescue!  I'm not a fan of big leafy salads, but grain salads (made with barley, quinoa, couscous...) are delicious and easy to prepare.  Tonight I made a salad with organic quinoa, black beans, orange juice, balsamic vinegar, tomatoes and more:


I also love that grain salads make awesome leftovers for lunch the next day!

What kinds of grain salads do you like?

that looks yummy! I agree, it's been in the mid to upper 90s here in NC and the last place I want to be is near the stove. I make a brown rice salad with black beans, red onion, snap peas, cucumbers, fresh rosemary and a simple vinegar and oil dressing. Yum!

I love a good rice salad, and couscous is a darling because it's so quick to prepare. Like you, I'm also not a huge fan of the leafy salad and like something more substantial. Yours looks great!

Yes, this is just my speed! I'm particularly fond of cooked barley in a cold salad- It just has such a great toothsome texture, and so much flavor.

I love the wheatberry salad at a local co-op and buy it as a special treat. Now you've got me thinking I should send for Chef Google! It would probably be a very economical meal if I was making it at home. Yum!
