Lately it's been hot and sunny here in Minnesota, and for me, that means the less time working over a hot stove, the better. Grain based salads to the rescue! I'm not a fan of big leafy salads, but grain salads (made with barley, quinoa, couscous...) are delicious and easy to prepare. Tonight I made a salad with organic quinoa, black beans, orange juice, balsamic vinegar, tomatoes and more:
I also love that grain salads make awesome leftovers for lunch the next day!
